So i work at Captain's Quarters. A job that i got as a result of a career fair at sullivan (highly advise utilizing it). My Chef asked me to help him create the night's special. At first i was intimidated because i had not done it before, also what if people didn't like it. We threw some ideas back and forth and the dish evolved into what you see now. A bed of hydro bib lettuce topped with pineapple, mango, jicama, and orange bell peppers. We patted scallops with a habenero spice mix and seared them off to give them that gorgeous carmelization and then finished them in the oven. Thinly sliced avacado was added as a garnish and the whole thing was drizzled with an orange and lemon sauce that i made. I was really proud of myself and also pleased that my education was really helping me foreward in my career. It really showed me that i was learning and not just craming for tests. My chef values my knowledge and opinions and now i have more confidence that i am headed for a succesful career in the culinary world! - Kamisha Jones
