A lot of fun things happened last quarter in my garde manger class.  We not only were able to do a presentation on how to carve ice for a Derby Party.  As a part of my 7 course final, I created a dessert that I could see on a menu in my restaurant…when I open it of course.  Enjoy the pictures of items that you could make as a part of your class!
